In the Kitchen with Coby | Dill Salmon and Asparagus

We’re back in the kitchen with Chef Coby Smith, this time making salmon with asparagus and a lemon butter sauce. Watch to see how Chef Coby of The Hope Bistro at CARTI makes this healthy, delicious dish.

Dill Salmon with Asparagus and Lemon Butter Sauce


  • 2 – 6 ounce salmon fillet
  • 30- springs of asparagus, snapped
  • 1 teaspoon lemon pepper
  • 1 teaspoon dry or fresh dill
  • 2 tablespoon clarified butter or cooking oil
  • Juice of 1 lemon
  • 2 tablespoons of cold butter


  1. Snap asparagus and discard bottoms
  2. Saute asparagus for two minutes, season with a pinch or two of lemon pepper, then set aside
  3. Season salmon with lemon pepper and dill
  4. Heat pan on medium-high heat, add clarified butter or cooking oil
  5. Place salmon in pan and sear each side for approximately two minutes
  6. Remove Salmon, and add Lemon juice to pan for deglazing
  7. Next add cold butter to pan, swirling the butter around the pan as the butter melts
  8. Place asparagus on plate, then place the salmon on top of asparagus, then finally pour the sauce over the salmon
  9. Enjoy!
